As we are now moving into citrus season, I thought I would post a versatile recipe that I have made with Sunflower Seed Flour. This recipe is fantastic glutenfree.
Orange Cake:
185 gms Butter
1 cup Caster Sugar (or 3/4 cup Xylitol to make it sugarfree)
3 Eggs
1/2 cup Flour (use a gluten free flour … View moreAs we are now moving into citrus season, I thought I would post a versatile recipe that I have made with Sunflower Seed Flour. This recipe is fantastic glutenfree.
Orange Cake:
185 gms Butter
1 cup Caster Sugar (or 3/4 cup Xylitol to make it sugarfree)
3 Eggs
1/2 cup Flour (use a gluten free flour to make it glutenfree)
1 cup Sunflower Seed Flour (or Almond Flour)
1 tsp Baking Powder
2 Whole Oranges (or citrus fruit of choice)

To prepare the oranges - chop into pieces, discard seeds, cover with water and cook in microwave for 10mins, or on stove top for about 15 mins. Strain off water and process oranges in a food processor until skins are chopped into very small pieces.

Cream butter and sugar. Add eggs. Mix in flour and baking powder then the oranges.

Bake in a moderate oven until cooked.
