Christmas Receipes especially for those with dietary issues

Greetings everyone,

Just a couple of recipes to share. Some of us have dietary issues and it's great when we come across some that we can share.

Stuffing - Gluten-Free and Breadless
Prep time: 5 minutes; Cook time: 10 minutes; Makes 2 cups
1 Tbspn oil, 1 red onion finely chopped, 1/2 cup celery, 1 apple grated,
Finely chopped 1/4 cup flat-leaf celery, 1 Tbspn rosemary finely chopped
1 Tbspn wholegrain mustard. A good grinding S & P. 1/2 cup almond flour
1 egg, grated 1 cup of cauliflower.
Heat oil in a pot over medium heat. Add onion and celery cook till tender 3 - 5 minutes or until onion is soft. Add the apple, cauliflower, parsley, rosemary, wholegrain mustard, S & P.. Saute till very soft 3 - 4 minutes. Stir in the almond flour and egg. Allow cooling. Stuff into your chicken or spread on to lamb flap thinly and then roll up and secure. - Looks yummy as a side anyway.

TURMERIC GINGER & LEMON ENERGY BALLS
1/2 Cup of almonds, 1/4 cup sunflower seeds
1/4 cup pumpkin seeds 4 large or small dates
2 Tbspn Chia seeds, Juice & rind of Lemon
1/2 tsp dried ginger 1/2 tsp Tumeric powder
1 tsp vanilla essence Good grinding black pepper
1/4 cup coconut oil 1/2 cup coconut
Plus 1/2 cup coconut for rolling.
Put all ingredients in the food processer, Blend.
In tbspn, lots roll into balls and roll in coconut.
Chill in fridge 30 - 60 minutes
