'World's first' winemaking method ships globally from North Canterbury

Hey neighbours,

A “world’s first” winemaking method born in North Canterbury exposes fruit to the elements to ensure each strain is unique.

Greystone Vineyard in Waipara, North Canterbury has been experimenting with the vineyard-treatment method for nearly 10 years, allowing the natural environment and temperatures to affect wines and shape them differently from strain to strain.

The process was formalised and made part of a research study by Lincoln University PhD student Constanza Iversen​ in 2019, who analyses each step of the process to determine what makes the wines shape themselves in different ways, and how wines can be altered using natural elements.
