ππΏ Rescued Rhubarb Meets Elderflower β A Perfect Pairing! πΏπ
I love experimenting with flavors, especially when it comes to repurposing rescued rhubarb! One of my favorite discoveries (though I probably canβt take credit for it) is how beautifully rhubarb and elderflower cordial come together in preserves.
Itβs so simple β just adjust the ratios of rhubarb, elderflower cordial, and sugar to your taste. Cook it down, testing as you go. Youβll know itβs ready when you run your finger along the back of cooking spoon and the mixture stays separated on both sides.

The Environmental Protection Authority announced this week that a proposed mine in Central Otago (near Cromwell) is about to enter its fast-track assessment process. A final decision could come within six months, and if itβs approved, construction might start as early as mid-2026.
