I love experimenting with flavors, especially when it comes to repurposing rescued rhubarb! One of my favorite discoveries (though I probably can’t take credit for it) is how beautifully rhubarb and elderflower cordial come together in preserves.

It’s so simple β€” just adjust the ratios of rhubarb, elderflower cordial, and sugar to your taste. Cook it down, testing as you go. You’ll know it’s ready when you run your finger along the back of cooking spoon and the mixture stays separated on both sides.

Many New Zealand gardens aren’t seeing as many monarch butterflies fluttering around their swan plants and flower beds these days β€” the hungry Asian paper wasp has been taking its toll.

Thanks to people like Alan Baldick, who’s made it his mission to protect the monarch, his neighbours still get to enjoy these beautiful butterflies in their own backyards.
