an increasenearly 200% for a needed commodity with nowhere else

Why are such increases allowed,
imagine if milk went up 200% at least we have a choice
You read it right, it's $9.95 for any of these. This is a separate summer menu and don't let the price fool you, all the dishes are delicious.
