Chicken Marengo
Chicken Marengo is originally thought to have been created in the North Italian village of Marengo to celebrate the victory of Napoleon’s invading army in 1800, during the period before he crowned himself Emperor of France.
At this time, tomatoes were a new delicacy, introduced from the Americas, and used to as a base for the chicken which was simmered with garlic, mushrooms and red wine and served with rice.
